Gluten Free Veggie Pizza Recipe

Makes 2 – 12″ Pizzas

This super easy recipe for a gluten free veggie pizza & whole grain crust will satisfy everyone in your family.

We have served this pizza to guests who enjoyed it even more than pizza crust made with wheat flour and it’s great for those of us who are sensitive to wheat, as well as gluten.

Pizza Ingredients:

Crust-

  • 1 Pkg Gluten Free Pizza Crust Mix (Bob’s Red Mill)
  • 1 1/2 cups warm water
  • 2 eggs
  • 2 Tbsp Olive Oil
  • Yeast Packet (Included with mix)

Toppings-

  • 6 oz Pizza Sauce (Homemade or Store bought)
  • 3 Cups shredded mozzarella cheese
  • 2 Small Yellow Summer Squash; sliced
  • 1/2 sweet red pepper; diced
  • 2 Roma Tomatoes; sliced
  • 1/2 cup red onion; diced
  • 1 cup frozen spinach; thawed, drained & chopped
  • Italian Seasoning of your choice
  • Parmesan Cheese (to sprinkle on top)

Directions:

Pizza Dough & Crust-

Pre-heat oven to 425 F. In a large mixer bowl, mix water and yeast.

Let stand a few minutes. Add eggs and oil and mix together.

Add Gluten free pizza crust mix and blend on medium speed until combined. (about a minute)

Leave dough in mixer bowl. Divide in half and cover with plastic wrap. Let rise for about 20 minutes.

Place dough on 2 – 12″ greased pizza pans or 1 large baking pan. With wet hands, spread out dough to fill pans.

Bake without toppings for 8-9 minutes. Remove from oven.

Toppings-

Spoon about 3 oz of pizza sauce over each crust.

Next, place about 1/2 cup of chopped spinach, and 1/4 cup diced onion, on each pizza.

Sprinkle 1 1/2 cups shredded mozzarella cheese on each pizza.

Top with slices of yellow squash, Roma tomato and Diced Red Pepper.

Sprinkle with Italian Seasoning and grated Parmesan.

Bake for 16-20 minutes until cheese is melted.
